If you’re visiting from Beauty and Bedlam or Blessed with Grace then welcome! Here is a GREAT recipe for Orange Cranberry Muffins. I was out of eggs yesterday so I substituted with cornstarch and they came out wonderful! So here is my eggless recipe-perfect if anyone in your family has an egg allergy!
2 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 TBS. Cornstarch
1 cup milk
1/2 cup vegetable oil
1/4 cup Orange Juice
1 cup dried cranberries
In a large bowl, combine the dry ingredients. Add the milk, oil and orange juice.
Stir into dry ingredients just until moistened. Fold in cranberries.
Fill paper-lined muffin cups two-thirds full. Bake at 400 degrees
for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing
from pan to a wire rack.

It’s Thursday yet again….almost Friday YEAH! The challenge over at Life as Mom is-what do you make with flour. Or should I say what do you BAKE!? Here’s a recipe to healthy Oatmeal Cranberry Cookies! Oh and they bake in 10 minutes! You know you’re smiling right now, imagining your kids asking “are they done yet?” for 10 min. instead of 25…..
1 c. WW Flour
1 1/2 c. Quick Oats
1/2 c. light Brown Sugar
1 1/2 tsp. Baking Soda
1 tsp. ground Cinnamon
1/2 tsp. Salt
1/2 tsp. ground Nutmeg
1/2 tsp. ground Ginger
2/3 c. Applesauce
1 tsp. Vanilla Ext.
1/2 c. dried Cranberries (Craisins)
1 egg
1 tbs. butter, softened
Preheat oven to 350 degrees. Combine all ingredients. Stir until well blended. Drop onto cookie sheet. Flatten. Bake 10 min.

As a native Floridian, I know orange juice! I grew up drinking Tropicana Orange Juice. My mother wouldn’t buy any other brand. She claimed it tasted the best and was the healthiest. Anyone who knows me knows I love a good bargain. And kid’s consignment sales are the way to snag one! I’ve purchased $120 strollers for $45, bathing suits for $1, books and puzzles for $1, and full outfits for $1.50 each!
You can also SELL you unwanted baby and kid’s items at these sales and make some extra cash. Let me tell you it’s better than holding a garage sale at your home! Your things get exposed to hundreds of mommies too!
